I feel like it’s been forever since I did an FF… but I’m back and ready with some simple and delicious recipes.

Easiest Veggie Soup Ever

  • chickpeas
  • corn
  • tons of diced veggies (tomatoes, zucchini, potatoes, carrots, onion, celery, peppers, etc.)
  • low-sodium chicken broth

Combine everything in a pot and simmer until veggies are tender.

Blue-Cornmeal Griddle Cakes

  • 1 1/4 c. ground blue cornmeal
  • 3/4 c. all-purpose flour
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1 c. skim milk
  • 1/3 c. honey
  • 2 Tbsp canola oil
  • 2 eggs, lightly beaten
  • 1 c. fresh or frozen blueberries (or 1/4 c. dried)
  • veggie-oil cooking spray
  • chili powder (optional)
  • Combine first 4 ingredients in a large bowl. Whisk together milk, 1/2 c. honey, oil, and eggs in a separate bowl and add to dry ingredients. Fold in blueberries. Heat nonstick skillet over medium heat. Coat lightly with cooking spray and dollop 1/4 c. batter for each cake. Warm remaining honey in a saucepan and add a dash of chili powder to taste, if desired. Drizzle over cakes.

Serves 8
Per 2 pancake serving:
442 cal, 11 g fat (1.5 g sat. fat), 76 g carbs, 11g protein, 6g fiber

Need an afternoon snack? All of my friends ask me what they should have as a healthy snack and I like to suggest a homemade trail mix. Here’s the perfect combo:
-dark choc. chips
-dried cherries
-pumpkin seeds
-any whole-grain cereal (Cheerios/Honey Nut Cheerios are good!)
