Foodalicious Friday!

I love Fridays… except when it’s been a long week of frustrating eating. *Sigh* What can you do? Move on.

It’s the Super Bowl weekend and I know what you are thinking – oh, the food, what am I going to do!? Never fear! I am here! With a healthier nacho recipe.

Healthier Nachos

  • 1 package corn tortillas (6 in. ones, not flour, you find them w/ the Mexican foods)
  • Low-fat cheddar cheese or part-skim mozzarella cheese\
  • Peppers (red, yellow, orange, green – any and all)
  • Onions
  • Mushrooms
  • Lean ground turkey
  • Can of black beans
  • Salsa

Preheat your oven to 400 degrees. Using a knife or  pizza cutter, slice up 6-10 tortillas into 4-6 triangles a piece. Place the triangles/chips on a baking sheet sprayed heavily with Pam. Fit as many as you can on the baking sheet without overlapping them too much. Spray the tops of the chips with Pam and sprinkle with salt. Bake for 8-12 mins. until lightly brown. Using the same baking sheet or an 8″x8″ baking dish, top the newly-made chips with cheese and nacho toppings. Bake at 350 degrees for 6-10 mins. until cheese is melted.

Other snack ideas:

  • Carrots, celery, and peppers strips with hummus
  • Air-popped popcorn with light butter or cheddar topping
  • Fruit salad with yogurt dip
  • A bowl of mixed nuts: almonds, lightly salted peanuts, pistacios, walnuts, etc.
